Ingredients: 

Easter cookies from Smyrna

• 1300 g plain flour
• 8 eggs, separated into yolks and whites
• 1 egg yolk for brushing the cookies
• 280 g Altis extra virgin olive oil (classic)
• 3 sachets Alsa vanilla powder
• 550 g sugar
• juice of an orange, slightly lukewarm
• 3 tsp ammonium carbonate
• zest of 1 medium orange

Preparation: 

1. Sift the flour and add the Altis extra virgin olive oil (classic).
2. Put the lukewarm orange juice in a small bowl together with the ammonium carbonate, the vanilla and the orange zest.
3. In another bowl, beat together the egg yolks with the sugar until they are light and fluffy. In another bowl, beat the egg whites into a meringue.
4. Pour the egg yolk and sugar mixture into the centre of the flour with the oil, and knead gently.
5. Gradually add the meringue.
6. Combine the orange juice with the dough and knead it until it becomes soft and light.
7. Form the dough into different cookie shapes.
8. Place them on a baking sheet greased with Altis extra virgin olive oil, widely spaced because they will rise.
9. Finally, brush each cookie with egg yolk.
10. Bake in a pre-heated moderate oven (170°C) for 20-25 minutes.
