Aubergines stuffed with Florina red peppers & feta cheese

Ingredients: 

• 2 aubergines
• 2 Florina red peppers, finely chopped
• 80 g rocket
• 10 cherry tomatoes, halved
• 200 g crumbled feta cheese
• 150 ml Altis extra virgin olive oil (classic)
• a little oregano or thyme
• salt and pepper
• a little Altis balsamic vinegar

Preparation: 

1. Wash the aubergines and prick them all over with a fork.
2. Grill them until the insides are soft.
3. Then cut them in half and place them on a platter.
4. Press the flesh with a spoon or fork to create a depression.
5. Put the peppers, rocket, tomatoes and feta cheese in a bowl. Add the olive oil, thyme and oregano, salt and pepper to taste, and toss lightly together.
6. Spoon the mixture onto the grilled aubergines.
7. Drizzle the platter and the aubergines with a little balsamic vinegar.
