In a nutshell, the flavor
of “good” Olive Oil has its own terminology:


Positive characteristic. It is the sense of a pleasant “nuisance” in the throat; with a pepper flavor that comes from Olive Oils produced in the beginning of the olive-growing period mainly from immature olives.


Characteristic flavor of Olive Oil, taken from green olives or from olives that are found in the stage that they get a mature coloring. Many times a pungent flavor is the clue for the existence of antioxidant components.
